THE LINEAGE
MASTER
TO
DISCIPLE
Born in Ushiku, Ibaraki, Yuki Honda worked in a ramen shop while in high school. Before turning 20, he decided to build a shop of his own and trained for one year under Koji Tashiro in the Menya Koji Group.
In 2008, at age 21, he opened Mendokoro Honda with Tashiro's support. He purchased the shop the following year and became independent. In 2020, he moved the flagship from Higashi-Jujo to Akihabara and began a new chapter.
The trust Tashiro placed in him became a starting point for how he develops others. What he received is now passed forward as opportunity for the next person.

Turning the trust he received into opportunity for others.
What has remained constant is the will to make the food better. Rather than resting on recognition, he continues to study ingredients and technique and renew the taste.
Because Tashiro once entrusted a shop to him, he gives managers meaningful autonomy and values the growth of distinctive individuals. The teaching continues through trust.
